Corn Bread

corn-bread-1Corn bread is an excellent addition to most any meal. I especially enjoy it with soups, stews and some crock pot dishes. Bake up some of this really good corn bread today and you and your family will be glad you did!

1 cup all-purpose flour
1 cup self-rising corn meal mix
1 teaspoon salt
3 teaspoons baking powder
1 large egg
5 tablespoons canola oil, divided *
1 cup milk

1. In a medium mixing bowl, combine flour, corn meal, salt and baking powder. Stir in egg, 3 tablespoons of theĀ  canola oil and milk until thoroughly blended.

2. Pour the remainingĀ  2 tablespoons canola oil in bottom of an 8×8-inch baking pan. Place pan in 400 degree F oven for 5 minutes or until hot.

3. Remove pan from oven and carefully pour batter evenly over hot oil. Return to oven and bake 20-25 minutes or until golden brown. Serves 8.

Crock Pot Chicken & Vegetables

crock-pot-chicken-vegetablesIf your day is as busy as mine, you will love this recipe. Just put everything in the crock pot in the morning and when dinner time rolls around, just dish it up and enjoy a wholesome, delicious meal in minutes. That means more time for relaxing with family or friends!

4 large potatoes, cut into eighths
2 celery stalks thickly sliced
1 large onion, chopped
1-1/2 cups baby carrots, left whole
1 (10.5 ounce) can cream of chicken soup
1 (10.5 ounce) can cream of mushroom soup
1/2 cup milk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon curry powder
4-6 boneless, skinless chicken breast halves

1. Butter the bottom and sides of crock pot. Place potatoes, celery, onions and baby carrots in bottom of crock pot.

2. In a large bowl, combine both soups, milk, salt, pepper and curry powder, with wire whisk until smooth. Pour 1/2 the mixture over vegetables in crock pot.

3. Place chicken breasts over soup mixture and pour remaining soup mixture over all. Cook on High for 4-6 hours or on Low for 7-8 hours. Makes 4-6 servings.
