Corn Bread
Corn bread is an excellent addition to most any meal. I especially enjoy it with soups, stews and some crock pot dishes. Bake up some of this really good corn bread today and you and your family will be glad you did!
1 cup all-purpose flour
1 cup self-rising corn meal mix
1 teaspoon salt
3 teaspoons baking powder
1 large egg
5 tablespoons canola oil, divided *
1 cup milk
1. In a medium mixing bowl, combine flour, corn meal, salt and baking powder. Stir in egg, 3 tablespoons of theĀ canola oil and milk until thoroughly blended.
2. Pour the remainingĀ 2 tablespoons canola oil in bottom of an 8×8-inch baking pan. Place pan in 400 degree F oven for 5 minutes or until hot.
3. Remove pan from oven and carefully pour batter evenly over hot oil. Return to oven and bake 20-25 minutes or until golden brown. Serves 8.
