If your day is as busy as mine, you will love this recipe. Just put everything in the crock pot in the morning and when dinner time rolls around, just dish it up and enjoy a wholesome, delicious meal in minutes. That means more time for relaxing with family or friends!
4 large potatoes, cut into eighths
2 celery stalks thickly sliced
1 large onion, chopped
1-1/2 cups baby carrots, left whole
1 (10.5 ounce) can cream of chicken soup
1 (10.5 ounce) can cream of mushroom soup
1/2 cup milk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon curry powder
4-6 boneless, skinless chicken breast halves
1. Butter the bottom and sides of crock pot. Place potatoes, celery, onions and baby carrots in bottom of crock pot.
2. In a large bowl, combine both soups, milk, salt, pepper and curry powder, with wire whisk until smooth. Pour 1/2 the mixture over vegetables in crock pot.
3. Place chicken breasts over soup mixture and pour remaining soup mixture over all. Cook on High for 4-6 hours or on Low for 7-8 hours. Makes 4-6 servings.
