Apple Butterscotch Crisp

Apple Butterscotch CrispSweet cinnamon flavored apples in a delicious butterscotch sauce. Yum!

6-7 cups tart apples, peeled and sliced
1 cup brown sugar, packed
1/2 cup all-purpose flour
1/2 cup quick-cooking oats*
1 package (3-1/2 ounces) cook & serve butterscotch pudding mix
1-1/4 teaspoons ground cinnamon**
1/2 cup butter or margarine

1. Place sliced apples in a 3 quart crock pot. In a large bowl, combine the brown sugar, flour, oats, pudding mix and cinnamon. Cut in butter or margarine until mixture is crumbly. Sprinkle over the sliced apples.

2. Cover and cook on Low setting for 5 to 5-1/2 hours or until the apples are tender. Makes 6 servings.

* Old fashioned oats may be used instead of the quick-cooking oats. They will add a little more texture to the crisp but the taste will be just as delicious.

** Using a wire whisk is an easy way to blend dry ingredients. It gives a more thorough blend than using a fork or spoon.

Crock Pot Green Beans

crock-pot-green-beansGreat tasting green beans are a favorite vegetable in my home. With this simple recipe, you can make them a favorite in your home too!

4 (14 ounce) cans cut green beans*
1/2 cup chopped onion
4 beef bouillon cubes
1/2 teaspoon black pepper**
1/2 teaspoon garlic powder
4-5 slices bacon, cut into small pieces

Pour 3 cans drained and 1 can undrained green beans in bottom of crock pot. Add chopped onion, bouillon cubes, pepper, garlic powder and cut up bacon. Stir to combine.

Cover tightly and cook on Low for 4-6 hours. Makes 8 servings with 5.5 net carbohydrates per serving.

* You may use frozen green beans (thawed), if you prefer.

**If you want to “turn up the heat”, add 1/2 teaspoon red pepper flakes before cooking!

Italian Bake

Italian BakeEverything you need for a marvelous Italian dinner, all in one dish. If your family likes Italian food, they will love this delicious and easy to make dinner.

1 pound ground beef chuck
1/2 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon black pepper
1-15 ounce can tomato sauce
1-8 ounce can sliced mushrooms
8 ounces shredded cheddar cheese
1 can crescent shaped dinner rolls
1/2 cup sour cream
1/2 teaspoon oregano
1/4 teaspoon basil leaves

1. In a 10 inch skillet over medium-high heat, cook ground chuck until well done. Add salt, pepper, tomato sauce and mushrooms. Mix well. Pour meat mixture into a 9×13″ baking dish and top with the cheddar cheese.

2. Open the can of crescent rolls, unroll and separate into 8 pieces.

3. In a small bowl, combine sour cream, oregano and basil leaves. Spread evenly on each triangle. Curve each triangle into a crescent shape and arrange on top of casserole.

4. Bake at 375 degrees F for 25-30 minutes or until crescent rolls are golden brown. Makes 6 servings.
