Since my husband is not a big fan of boxed potato dishes, I created this recipe in hopes he would like it. It has since become a big favorite of my whole family. I hope you will enjoy it as much as we do!
4 to 5 large potatoes, peeled and cut into eighths
1 large onion, cut into eighths
8 ounces cheese loaf (Velveeta), cut into 2 inch cubes
2 tablespoons butter or margarine
1/2 cup milk
1/4 cup heavy whipping cream*
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1. Place the potatoes and onion in a large saucepan; cover with water and heat to boiling over medium-high heat. Continue cooking until the potatoes are tender. Drain and pour into a 2 quart casserole dish.
2. In a small saucepan, combine cheese, butter or margarine, milk, cream, salt, pepper and garlic powder. Place saucepan over medium-low heat and stir constantly until cheese is melted and smooth. Pour cheese mixture over potatoes and onions in casserole dish. Stir to blend well.
3. Bake in 350 degree F oven for 15 to 20 minutes or until bubbly. Makes 6 servings.
* You may omit the heavy whipping cream, if desired, and increase milk to 3/4 cup.
So yummy, just made them for the first time and they are so good. I will be making them again.
I am making these right now and I can’t wait to try them! I used cheddar cheese instead of Velveeta because I’m not a fan of Velveeta. And they turned out SO good 🙂 well definitely make this again.
I made this, using cheddar and it was so delicious. I made sure the top was super crispy but cranking up the heat and it was gorgeous!

Carol, we just use regular Idaho potatoes and they work fabulously!
Could these be made and then rewarmed in a crock pot?
