Yeast Dough Bread & Rolls

BreadA simple yeast dough recipe for delicious homemade bread or rolls!

1 package active dry yeast
1 cup lukewarm water (110 degrees)
3 tablespoons sugar
2 tablespoons shortening
1 egg
1/2 teaspoon salt
3 to 3-1/2 cups all-purpose flour

1. In a large mixing bowl, dissolve yeast in warm water; let stand 5 minutes. Add sugar, shortening, egg, salt and 1-1/2 cups flour. Beat on low speed of electric mixer until smooth.

2. Gradually stir in enough remaining flour to form a soft dough. Place dough in a well-greased bowl; grease top of dough. Cover and let rise in a warm place* for 1 hour or until double.

3. Punch down and turn out onto lightly floured surface. Knead 4 to 5 times. Shape into loaves and put into greased loaf pans; cover and let rise 1 hour. Bake at 400 degrees F for 20 to 30 minutes. Remove from oven; grease tops with shortening and wrap pan and bread in a clean cloth. Let stand about 15 minutes; this will give the bread a soft crust. Makes 2 loaves.

For rolls: shape the dough into rolls; place on a greased baking pan. Cover with a clean cloth and let rise 1 hour. Bake at 400 degrees F for 15 to 20 minutes or until golden brown. Brush tops with melted butter, if desired. Makes 16 rolls.

* To make a warm place for dough to rise, turn oven on warm setting for 10 minutes; turn oven off and place dough in oven to rise. Do not open oven door while dough is rising.
