Chili Cheese Dip

chili-cheese-dipWhether you’re having a party or spending time with family, this dip is the perfect snack!

1 (16 oz) loaf processed cheese (Velveeta), cubed
1 (15 oz) can chili (no beans)
Chopped green onions, (optional)
Tortilla chips

In a 2 quart microwaveable bowl, combine cheese and chili. Cook on High for 6 to 8 minutes, stirring every 2 minutes, until cheese is melted and smooth. Sprinkle with onions, if desired. Serve with tortilla chips. Makes 10 to 12 servings.

Traditional Pecan Pie

traditional-pecan-pieThis rich and delicious pecan pie is a family favorite at my house.

3 large eggs, slightly beaten
1 cup light corn syrup
1 cup granulated sugar
2 tablespoons butter or margarine, melted
1-1/4 teaspoon vanilla extract
1-1/2 cups chopped pecans*
1 unbaked 9-inch pie shell

1. In a large bowl, combine eggs, corn syrup, sugar, butter or margarine and vanilla extract. Stir in chopped pecans; blend well.

2. Pour into unbaked pie shell. Bake at 350 degrees F for 50 to 55 minutes. Cool before cutting. Store covered in refrigerator. Makes 8 servings.

*Whole pecans may be used, if desired.

Tender Crock-Pot Ham

Tender Crock-Pot HamUse your oven for sides and desserts while this tender, flavorful ham “bakes” in your crock pot.

1 (4 pound) fully cooked ham
1-1/2 cups ginger ale
1/4 cup honey
1/4 cup packed brown sugar
1/2 teaspoon ground mustard
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon

1. Place ham in a 5 quart crock pot. Pour ginger ale over ham. Cover and cook on Low for 4 to 5 hours or until ham is heated through.

2. In a small bowl, combine the honey, brown sugar, mustard, cloves and cinnamon. Spoon over ham; cook 30 minutes longer. Makes 12 to 14 servings.

Simply Delicious Potato Casserole

Simply Delicious Potato CasseroleThis rich, cheesy, simple-to-make potato dish will quickly become a family favorite at your house!

8 medium potatoes, peeled and cut into cubes
1 cup mayonnaise
2 cups processed cheese (Velveeta), cut into cubes
1/2 cup sour cream
1 small onion, chopped
3 strips bacon, cooked crisp and crumbled
1/2 teaspoon salt
1/4 teaspoon pepper

1. In a large saucepan, cook potatoes in boiling water for 10 minutes; drain. In an 11×7-inch baking dish, combine potatoes, cheese, mayonnaise, sour cream, onion, salt and pepper; Stir together until well blended.

2. Sprinkle crumpled bacon over potato mixture. Bake at 350 degrees F for 1 hour. Makes 6 servings.
