Crunchy Potato Balls

Crunchy Potato BallsThese delightfully delicious potato balls are sure to be a hit at your next party or get-together!

2 cups cooked mashed potatoes
2 cups finely chopped cooked ham
1 cup shredded Swiss cheese
1/2 cup mayonnaise
2 large eggs, beaten
1/4 cup finely chopped onion
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper
3-1/2 cups crushed cornflakes

1. In a large mixing bowl, combine all the ingredients except the cornflakes; mix well. Shape into 1-inch balls.

2. Roll each ball in cornflakes and arrange on a greased 11×7-inch baking sheet.

3. Bake at 350 degrees F for 30 minutes or until brown. Makes 15 servings.

Vegetable-Braised Turkey Breast

Vegetable Braised Turkey BreastDelicious tender turkey breast basted with flavorful vegetables and spices. Just add your favorite sides for a great meal.

1 tablespoon vegetable or canola oil
2 ribs celery, chopped
2 medium carrots, chopped
1 (14.5 oz) can diced tomatoes, undrained
1 envelope onion soup mix
1-1/2 cups water
3/4 teaspoon dried thyme leaves, crushed
1 (4-1/2 to 5 pound) turkey breast with bone

Heat oil over medium-high heat in a 3 quart saucepan. Add celery and carrots and cook until tender, stirring occasionally, about 5 minutes.

Stir in the diced tomatoes. In a small bowl, combine onion soup mix, water and thyme. Stir into tomato mixture.

Arrange turkey breast, breast side up, in a 13×9-inch baking or roasting pan. Pour vegetable mixture over and around turkey breast. Cover with aluminum foil and bake at 350 degrees F for 1 hour, basting once.

Remove the foil and bake 1 hour longer, basting occasionally. Let stand loosely covered with aluminum foil for 10 minutes. Serve with pan juices and vegetables. Makes 8 servings.
