Cornmeal Pancakes

Cornmeal PancakesStart your morning off right with these light golden pancakes served hot off the griddle!

1-1/3 cups all-purpose flour
2/3 cup cornmeal
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 eggs
1-1/3 cups milk
1/2 teaspoon vanilla extract
1/4 cup vegetable or canola oil
Pancake syrup

1.In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt.

2. In a separate bowl, whisk together the eggs, milk, vanilla and oil; stir into the dry ingredients just until moistened.

3. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. When bubbles form on the top, turn; cook second side until golden brown. Serve with pancake syrup. Makes 4 servings.

  • I like to make these ahead of time and freeze them individually. Hubby just takes them out and warms them for our breakfast. He’s just a great guy! Thanks for sharing it.     I hope you had a great weekend! Larry made burgers on Saturday, so I didn’t get to make your skillet spaghetti recipe. But, a friend did get to make it, and she said her family loved it! I’ll have to try it another week! I gave it a thumbs up over on my blog!!

I googled Munchies Monday, and sure enough, I found it. When I got there, I found my sweet friend, Emily, had a great recipe posted!! You and I must think alike!! You may have been posting there a while, and I’ve just missed it at the end of your posts. Today is my first time to share there! I love munchies and can make a meal off of appetizers!!
