My best friend Judi shared this recipe with me and it has become a family favorite.
1 (32 oz) package frozen hash brown potatoes, thawed
2 cups shredded cheddar cheese
1 (10.5 oz) can condensed cream of celery soup
1 (16 oz) carton sour cream
1/2 cup chopped onion
1/2 cup melted butter or margarine
1-1/4 teaspoons salt
1/2 teaspoon pepper
1. Arrange the thawed hash brown potatoes in bottom of a 13×9-inch baking dish sprayed with cooking spray. Sprinkle the cheddar cheese over the potatoes.
2. In a medium bowl, combine the remaining ingredients; stir into the potato mixture.
3. Bake at 350 degrees F for 1 hour or until hot and bubbly. Makes 8 servings.

We love this, Emily! Around here, folks add a topping of crushed corn flakes tossed with a bit of melted butter. I make it that way sometimes for variety, but mostly, I make it just like yours! I hope you’ve had a great week!! Many blessings!!
