Creamy, satisfying comfort food that’s quick and easy to make!
1-1/2 cups Radiatore pasta, uncooked
4 boneless, skinless chicken breast halves, cut into bite-size pieces
2 tablespoons butter
1 (10-3/4 ounces) can condensed cream of mushroom soup, undiluted
1 cup sour cream
1 (4 ounces) can mushroom stems & pieces
1 cup shredded cheddar cheese
1 cup French-fried onions
1. Cook the pasta according to the package directions; drain and transfer to an 11×7-inch baking dish sprayed with cooking spray.
2. In a large skillet, cook the chicken in the butter until meat is no longer pink. Stir in the remaining ingredients. Pour mixture over pasta in baking dish. Top with cheddar cheese and French-fried onions.
3. Bake at 350 degrees F. for 20 to 25 minutes or until hot and bubbly, cheese is melted and onions are golden brown. Makes 4 servings.

I may have to try this one this weekend. I just bought some fresh mushrooms that were marked down cause they’re a little old. This sounds perfect. I just found a big pack of boneless, skinless chicken thighs, which I have been told is a good alternative to the breasts in dishes like this and much cheaper when you can find them. I’ll let you know how it turns out.
I would love to get in on saving some money by buying the chicken thighs but I can’t get my family to eat anything but white meat!! Picky eaters are sometimes difficult to deal with!!
I hope you have a great 4th of July holiday! My family is sadly dealing with the death of special friend who passed away this morning from cancer. Such a horrible disease. He will be greatly missed. 🙁

Emily I am so sorry about your friend passing. Both of my parents died of cancer. I hate that word. I also had a DIL whe died of cancer at age 42. I bet everyone you know has been touched in some way by that terrible disease.
My dh only like dark meat. I like both. Your recipe sounds delicious.
All my company is gone and the computer is mine again. My grands took over my laptop when they were here. I let them of course. Smile!
