Spinach and Mushroom Frittata

A delicious way to enjoy the healthy benefits of spinach and it is so easy-to-make!

Ingredients

Vegetable cooking spray
10 eggs
1 (10-3/4 ounces) can condensed Cream of Mushroom soup
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1-1/2 cups shredded Swiss cheese
1/2 teaspoon ground black pepper

Step by Step Instructions

Step 1

Heat the oven to 375 degrees F. Spray a 12x8x2-inch baking dish with cooking spray and set aside.

Step 2

With a wire whisk, beat the eggs in a large bowl; stir in the soup, spinach, 1 cup of the cheese and the black pepper. Pour mixture into the prepared baking dish.

Step 3

Bake for 35 minutes or until the eggs are set in the center. Sprinkle with the remaining shredded cheese. Let stand 5-minutes or until the cheese is melted.
