Apple Delight

Apple DelightDuring the hot days of summer when I don’t want to heat up the house by using my oven, I turn to my trusty slow cooker. This delightful apple dessert turns out perfect every time!

1 (21 ounce) can apple pie filling (you could substitute cherry pie filling, if desired)
1 (18-1/4 ounce) box yellow cake mix
1/2 cup butter, melted
1/3 cup chopped pecans or walnuts (optional)

1. Spread the pie filling in bottom of a 1-1/2-quart slow cooker sprayed with cooking spray.

2. In a medium bowl, combine the dry cake mix and melted butter until crumbly; sprinkle over the pie filling. Sprinkle nuts over the top.

3. Cover; cook on Low for 2 to 2-1/2 hours. Serve hot from the slow cooker in bowls. Top with vanilla ice cream if desired. Makes 10 servings.

Dutch Apple Pie

Dutch Apple Pie

Delicious cinnamon-apple filling in a buttery crumb crust makes this apple pie the perfect dessert for any occasion!

2-1/4 cups all-purpose flour
1 cup packed brown sugar
1/2 cup quick-cooking oats
3/4 cup butter or margarine, melted
2/3 cup sugar
3 tablespoons cornstarch
1-1/4 cups cold water
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 cups chopped peeled tart apples
1 teaspoon vanilla extract

1. In a large bowl, combine the flour, brown sugar, oats and melted butter or margarine until crumbly. Set aside 1 cup; press remaining crumb mixture into bottom and up the sides of an ungreased 9-inch pie plate; set aside.

2. In a large saucepan, combine the sugar, cornstarch, water, cinnamon and nutmeg until smooth. Bring to a boil over medium heat; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in the apples and vanilla extract.

3. Pour apple mixture into the prepared crust; top with the reserved 1 cup crumb mixture. Bake at 350 degrees F for 40 to 45 minutes or until crust is golden brown. Cool on wire rack. Makes 8 servings.

Crustless Apple Pie

3/4 cup granulated sugar
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon apple pie spice
1/4 teaspoon salt
1 large egg, slightly beaten
1 teaspoon vanilla extract
2 cups sliced tart apples
1/2 cup chopped pecans

Preheat the oven to 350 degrees F. In a medium mixing bowl, combine the sugar, flour, baking powder, salt and apple pie spice; mix well. Stir in the egg and vanilla. Add the apples and pecans; stir until well blended.

Spoon into a buttered 10-inch deep-dish pie plate. Bake for 30 minutes or until the apples are tender. Makes 6 servings.
