Marbled Chocolate Brownies

Marbled Chocolate BrowniesThese rich, moist brownies are made extra special with two types of chocolate swirled on top while they are still warm. Delicious!

BROWNIES:

1 (4 ounce) bar bittersweet baking chocolate
1/2 cup butter
2 tablespoons baking cocoa powder
1-1/4 cups sugar
1/4 teaspoon salt
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder

TOPPING:

1 cup semisweet chocolate baking chips
1 cup white chocolate baking chips

1. Preheat oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil; making sure some of the foil hangs over the sides. Spray the foil with nonstick cooking spray.

2. Chop the bittersweet chocolate into small pieces. In a microwave-safe bowl, place the chocolate, butter and cocoa powder; microwave on High until the chocolate and butter are melted. Stir together and set aside.

3. In a medium bowl, combine the sugar and salt; add the chocolate mixture and stir to combine. Add the eggs, one at a time, stirring after each addition. Stir in the vanilla extract. Sift in the flour and baking powder and mix well.

4. Spread batter into prepared baking pan. Bake for 30 minutes; remove from the oven.

5. Sprinkle both chocolate chips over the brownies; return to the oven for 1 minute. Remove from oven and allow to sit for 1 minute. Using the foil as handles, lift the brownies out of the pan. Spread the chocolate chips over the brownies for a marbled effect. Let cool completely before cutting into bars.

Cupcake Brownies

Cupcake BrowniesA delightfully easy way to make delicious chocolate brownies without the mess! These can be frosted, if desired, but we like them just the way they are!

1 cup butter, cubed
4 ounces (4 squares) semisweet chocolate
4 eggs
1-3/4 cups sugar
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1 cup chopped pecans

1. Melt butter and chocolate in a small microwaveable bowl on High; stir until smooth.

2. In a large bowl, beat the eggs and sugar until blended. Beat in vanilla and the chocolate mixture.

3. Gradually stir in the flour until blended; stir in the nuts.

4. Fill greased or paper lined muffin cups 2/3 full. Bake at 350 degrees F. for 18 to 20 minutes or until toothpick inserted in the middle comes out clean; cool. Makes 18 cupcake brownies.

Triple Chocolate Brownies

Triple Chocolate BrowniesThese are my husband’s all-time favorite brownies! I hope you enjoy them as much as he does!

1 cup all-purpose flour
3/4 teaspoon baking powder
1/2 cup butter, melted
6 tablespoons baking cocoa
2 tablespoons cooking oil
1 cup sugar
2 eggs, well beaten
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips, divided
1 cup chopped walnuts or pecans, divided

1. In a small bowl, combine flour and baking powder; set aside.

2. In a large mixer bowl, beat butter, cocoa, oil, sugar and eggs until well blended; stir in vanilla. Add the flour mixture; blend well. Stir in 1/2 cup of the chocolate chips and 1/2 cup of the nuts.

3. Pour mixture into a greased 8×8-inch baking pan. Bake at 350 degrees F for 20 to 25 minutes. Immediately sprinkle with remaining 1/2 cup chopped nuts and the remaining 1/2 cup chocolate chips. Let stand until chocolate chips are soft and shiny. Gently spread the melted chocolate chips over top. Cool and cut into squares. Makes 16 to 20 brownies.

Walnut-Topped Brownies

BROWNIE BASE
3/4 cup butter or margarine, cubed
4 (1 oz each) squares unsweetened chocolate
4 eggs
2 cups sugar
1-1/4 teaspoons vanilla
1 cup all-purpose flour

WALNUT TOPPING
3/4 cup packed brown sugar
1/4 cup butter or margarine, cubed
2 eggs, lightly beaten
3 tablespoons all-purpose flour
1 teaspoon vanilla
2 cups chopped walnuts

1. In a small microwaveable bowl, melt butter and chocolate on high; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar until fluffy; stir in the vanilla and chocolate mixture. Add the flour; stir until well blended. Pour mixture into a greased 13×9-inch baking pan; set aside.

2. In a small saucepan, combine the brown sugar and butter or margarine; cook and stir over low heat until the butter is melted. Add the eggs, flour and vanilla; stir until well blended. Stir in the walnuts. Spread evenly over the brownie batter.

3. Bake at350 degrees F for 40 to 45 minutes or until wooden toothpick inserted near the center comes out with moist crumbs. Do not over-bake. Cool completely on wire rack. Makes 18 brownies.

Brownies

browniesThis simple brownie recipe has been a family favorite for many years.

3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/3 cup butter or margarine, softened
2 squares (1 oz each) unsweetened chocolate, melted
2 eggs
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup chopped walnuts

In a small bowl, combine the flour and baking powder; set aside.

In a large mixer bowl, cream the butter and melted chocolate until fluffy. Beat in the eggs and sugar; add the vanilla extract.

Beat in the flour mixture a little at a time until well blended. Stir in the chopped walnuts.

Spread mixture in an 8×8-inch greased baking pan. Bake at 350 degrees F for 18 to 20 minutes. Makes 16 to 20 brownies.

Frosted Brownie Bars

frosted-brownie-barsThese bars will be lighter in texture than traditional brownies but incredibly rich tasting!! They are equally as delicious without the frosting.

Fudge Bars:

1 cup butter or margarine, softened
2 cups sugar
4 large eggs
2 squares unsweetened chocolate, melted
2 teaspoons vanilla
1-1/2 cups sifted self-rising flour
1-1/4 cups chopped walnuts or pecans

Frosting:

1/3 cup butter or margarine
3 cups powdered sugar
3 tablespoons milk
1-1/2 teaspoons vanilla

1. In a large mixing bowl, combine softened butter, sugar, eggs, melted unsweetened chocolate and vanilla until well blended. Add sifted self-rising flour a little at a time until well blended. Stir in nuts. Pour into a greased 9×15 inch baking pan. Cook at 350 degrees for 30 minutes. Remove from oven and allow to cool.

2. While bars are cooling, brown 1/3 cup butter in a small saucepan, stirring constantly, until lightly brown. This will not take long. When brown, remove from heat and add powdered sugar, milk and vanilla. Spread on top of fudge bars. Cool. Cut into squares. Makes 12-15 squares.

3/4 cup butter, melted
1-1/2 cups sugar
2 teaspoons vanilla extract
3 large eggs
3/4 cup all-purpose flour
1/2 cup baking cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
1-1/4 cups semi-sweet chocolate chips
1/2 cup chopped walnuts, (optional)

1. Heat oven to 350 degrees F. Grease an 8x8x2-inch baking pan. In medium mixing bowl, blend melted butter, sugar and vanilla. Add eggs; beat well with spoon.

2. In a small bowl, combine flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well blended. Stir in chocolate chips and nuts.

3. Spread into prepared pan. Bake 40-45 minutes or until brownies begin to pull away from sides of pan. Cool completely; cut into squares. Makes 16 brownies.
