Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies DSCN2312Yummy goodness in every bite of these big cookies chock-full of wholesome oats and luscious chocolate chips!

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1-1/2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups old-fashioned oats
1 (12 ounce) package semisweet chocolate chips

1. In a large bowl, cream the butter and both sugars until light and fluffy. Beat in the egg and vanilla extract.

2. In a small bowl, combine the flour, baking soda, baking powder and salt; add to the creamed mixture and mix well. Stir in the oats and chocolate chips.

3. Drop by rounded tablespoonfuls 2-inches apart onto ungreased baking sheets. Bake at 350 degrees F. for 10 to 12 minutes or until golden brown. Cool on wire racks. Makes 4 dozen.

Chocolate Chip Cookie Bars

chocolate-chip-cookie-barsEveryone will love these rich chocolaty cookie bars. Enjoy them with a tall glass of cold milk or a hot cup of coffee. The perfect dessert for any occasion.

2 cups finely crushed creme-filled chocolate sandwich cookies
1/4 cup butter or margarine, melted
2 cups semi-sweet chocolate chips
1 (14 oz) can sweetened condensed milk*
1 teaspoon vanilla extract
1 cup chopped walnuts

1. Combine cookie crumbs and melted butter or margarine; press firmly on bottom of a 13×9-inch baking pan.

2. In a medium saucepan, over medium heat, melt 1 cup of the chips with sweetened condensed milk and vanilla extract. Pour evenly over prepared crust. Top with remaining 1 cup chips and 1 cup walnuts.

3. Bake at 350 degrees F for 20 minutes or until set. Cool; cut into bars. Store tightly covered at room temperature. Makes 24 to 36 bars.
