Whole Wheat & Oat Muffins

Whole Grain & Oat MuffinsI made a batch of these for breakfast this morning and they were a big hit! All the goodness of whole wheat and oats in a mouth-watering, delicious muffin!

1 cup whole wheat flour
1 cup rolled oats, quick cooking or old-fashioned
2 teaspoons baking soda
1/2 cup packed brown sugar
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 cup raisins
1/2 cup flaked coconut
1/2 cup chopped nuts, (I used walnuts)
1 egg, beaten
1 cup milk
3 tablespoons olive or canola oil

1. In a large bowl, combine all the dry ingredients, including the raisins, coconut and chopped nuts.

2. Make a well in the center of the dry ingredients. Add the egg, milk and oil; blend only until moistened.

3. Fill greased muffin cups 1/2 full with mixture. Bake at 375 degrees F for 15 to 17 minutes. Makes 12 to 16 muffins.

Dutch Apple Pie

Dutch Apple Pie

Delicious cinnamon-apple filling in a buttery crumb crust makes this apple pie the perfect dessert for any occasion!

2-1/4 cups all-purpose flour
1 cup packed brown sugar
1/2 cup quick-cooking oats
3/4 cup butter or margarine, melted
2/3 cup sugar
3 tablespoons cornstarch
1-1/4 cups cold water
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 cups chopped peeled tart apples
1 teaspoon vanilla extract

1. In a large bowl, combine the flour, brown sugar, oats and melted butter or margarine until crumbly. Set aside 1 cup; press remaining crumb mixture into bottom and up the sides of an ungreased 9-inch pie plate; set aside.

2. In a large saucepan, combine the sugar, cornstarch, water, cinnamon and nutmeg until smooth. Bring to a boil over medium heat; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in the apples and vanilla extract.

3. Pour apple mixture into the prepared crust; top with the reserved 1 cup crumb mixture. Bake at 350 degrees F for 40 to 45 minutes or until crust is golden brown. Cool on wire rack. Makes 8 servings.

Baked Apple French Toast

1/2 (of a 16 oz.) loaf French bread
4 large eggs
1-1/2 cups milk
2 tablespoons + 1/4 cup sugar, divided
1-1/2 teaspoons vanilla extract
2 large apples, peeled and sliced
2 teaspoons ground cinnamon
1 tablespoon butter or margarine

1. Preheat oven to 400 degrees F. With a serrated knife, slice the French bread into 1-1/2-inch slices. Place in a single layer in a lightly greased 11×7-inch baking dish.

2. In a large mixing bowl, whisk the eggs until well blended. Add the milk, 2 tablespoons sugar and vanilla extract; whisk until well blended. Pour 1/2 of the milk mixture over the bread slices.

3. Arrange apple slices evenly over the bread; pour remaining egg mixture over the apples. In a small bowl, combine the remaining 1/4 cup sugar and the cinnamon; sprinkle over the top. Dot with the butter or margarine.

4. Bake for 30 to 35 minutes or until the apples are tender. Allow to stand for 10 minutes before serving. Serve with maple syrup. Makes 6 servings.

Baked French Toast

Baked French ToastAn easy way to enjoy delicious French toast for breakfast or anytime!

Nonstick cooking spray
1 large egg
3/4 cup milk
1-1/2 teaspoons vanilla
1/2 teaspoon ground cinnamon
1 tablespoon granulated sugar
8 slices French bread, cut 1/2 inch thick
Maple syrup

1. Preheat oven to 450 degrees F. Spray a large baking sheet with nonstick cooking spray; set aside.

2. In a shallow dish, whisk together the egg, milk, vanilla, cinnamon and sugar. Soak each bread slice in egg mixture about 15 seconds on each side. Place soaked bread slices on prepared baking sheet.

3. Bake for 6 to 8 minutes or until bread slices are lightly browned. Turn slices over; bake an additional 6 to 8 minutes or until golden brown. Serve with maple syrup. Makes 4 servings.

Sugar & Spice Biscuits

Sugar & Spice BiscuitsThese lightly sweet, cinnamon flavor biscuits are great just the way they are or you can spread them with your favorite jam or jelly!

Cooking spray
2-1/4 cups all-purpose baking mix (Bisquick)
2/3 cup milk
2 tablespoons butter or margarine, melted
3 tablespoons sugar
2 teaspoons ground cinnamon

Lightly coat eight 2-1/2-inch muffin cups with the cooking spray; set aside. In a medium bowl, combine the baking mix and milk until a soft dough forms.

Turn the dough out onto a lightly floured surface; knead lightly until nearly smooth, about 10 times. Pat or roll the dough into an 8-inch square. Brush dough with melted butter; sprinkle with the sugar and cinnamon.

Cut dough into sixteen 2-inch squares. Gently press two squares together, sugar sides up. Place in prepared muffin cups, sugar sides up.

Bake at 400 degrees for 10 to 12 minutes or until golden brown. Remove from muffin cups; serve warm. Makes 8 biscuits.

Apple Crisp

Apple CrispYou will love how easy this delicious apple crisp is to make. Surprise your family with this special treat tonight!

6 cups peeled, thinly sliced tart apples
1 tablespoon lemon juice
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 egg
1/2 cup butter or margarine, melted

Grease or butter an 8×8-inch baking pan; set aside. Sprinkle the apples with the lemon juice. Arrange in bottom of baking dish.

In a medium bowl, combine the flour, sugar, baking powder, salt and cinnamon; blend well. Add the egg and blend until crumbly. Sprinkle crumb mixture evenly over apples in baking dish.

Drizzle the melted butter or margarine evenly over top of crumb mixture. Bake at 350 degrees F for 30 to 40 minutes or until bubbly and topping is golden brown. Makes 8 servings.

Apple Maple Cream Pie

apple-maple-cream-pie-1Cinnamony apples, rich maple cream filling topped with a crunchy streusel. Yum! Yum!

4 cups peeled tart apples, thinly sliced
1/4 cup granulated sugar
1-1/4 teaspoons ground cinnamon
1/4 cup butter or margarine, cubed
1 (9-inch) pastry shell, baked

FILLING:
1 (8 oz) package cream cheese, softened
1-1/2 cups cold milk
1 (3.4 oz) package instant vanilla pudding mix
1 teaspoon maple extract

TOPPING:
1/4 cup granulated sugar
3 tablespoons quick-cooking oats
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons butter or margarine, melted

Toss together, in a large bowl, the apples, sugar and cinnamon. Melt butter in a large skillet over medium heat. Stir in the apple mixture and cook until tender; about 12 minutes. Cool; spoon mixture into baked pastry shell and set aside.

Beat the cream cheese in a small bowl until fluffy. In a separate bowl, whisk the milk and pudding mix for 2 minutes. Let stand until soft set; about 2 minutes. Gradually beat into cream cheese. Stir in the maple extract. Spoon over the apple layer. Cover and refrigerate until set; about 2 hours.

In a small bowl, combine the sugar, oats, flour, cinnamon and melted butter. Spread onto an ungreased baking sheet. Bake at 350 degrees F for 20 to 25 minutes or until crisp and golden brown; stir 3 or 4 times. Cool. Sprinkle topping over the pie just before serving. Makes 6 to 8 servings.

Praline Biscuits

Praline BiscuitsBring your family to the breakfast table with these marvelous praline biscuits!

1/2 cup butter or margarine, cut into 12 pieces
1/2 cup packed light brown sugar
36 pecan halves
Cinnamon to taste
2 cups all-purpose baking mix (Bisquick)
1/3 cup applesauce
1/3 cup milk

1. In each of 12 greased muffin cups, arrange 1 piece of butter or margarine, 2 teaspoons of the brown sugar and 3 of the pecan halves. Sprinkle with cinnamon. Place in a 400 degree F oven just until the butter and sugar melt.

2. In a medium mixing bowl, combine the baking mix, applesauce and milk; stir 20 strokes. Drop mixture by spoonfuls over the butter mixture in the prepared muffin cups.

3. Bake for 10 minutes or until golden brown. Immediately invert onto a serving platter. Makes 12 biscuits.
