Cornmeal Pancakes

Cornmeal PancakesStart your morning off right with these light golden pancakes served hot off the griddle!

1-1/3 cups all-purpose flour
2/3 cup cornmeal
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 eggs
1-1/3 cups milk
1/2 teaspoon vanilla extract
1/4 cup vegetable or canola oil
Pancake syrup

In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In a separate bowl, whisk together the eggs, milk, vanilla and oil; stir into the dry ingredients just until moistened.

Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. When bubbles form on the top, turn; cook second side until golden brown. Serve with pancake syrup. Makes 4 servings.

Hush Puppies

Hush PuppiesThese light golden hush puppies are the perfect companion to your favorite fish dinner!

2-1/4 cups corn meal
1 cup + 3 tablespoons all-purpose flour
2 teaspoons baking powder
1-1/2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 large egg
2/3 cup water
1/2 cup buttermilk
1/2 cup butter or margarine, melted
1 cup grated onion
1/4 cup chopped green bell pepper
Oil for deep-fat frying

Combine the cornmeal, flour, baking powder, sugar, salt and baking soda in a large bowl. In a medium bowl, whisk together the egg, water, buttermilk and melted butter.

Add the onion and green bell pepper. Stir into the dry ingredients just until moistened.

Heat oil in a deep-fat fryer or an electric skillet to 375 degrees F. Drop the batter by teaspoonfuls into the hot oil a few at a time. Fry until golden brown on both sides.

Drain on paper towels. Serve warm. Makes 6 dozen hush puppies.
