<p>1-1/3 cups all-purpose flour<br />
2/3 cup cornmeal<br />
2 tablespoons sugar<br />
4 teaspoons baking powder<br />
1 teaspoon salt<br />
2 eggs<br />
1-1/3 cups milk<br />
1/2 teaspoon vanilla extract<br />
1/4 cup vegetable or canola oil<br />
Pancake syrup</p>
<p>1.In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt.</p>
<p>2. In a separate bowl, whisk together the eggs, milk, vanilla and oil; stir into the dry ingredients just until moistened.</p>
<p>3. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. When bubbles form on the top, turn; cook second side until golden brown. Serve with pancake syrup. Makes 4 servings.</p>

<p>2-1/4 cups corn meal<br />
1 cup + 3 tablespoons all-purpose flour<br />
2 teaspoons baking powder<br />
1-1/2 teaspoons sugar<br />
1 teaspoon salt<br />
1/2 teaspoon baking soda<br />
1 large egg<br />
2/3 cup water<br />
1/2 cup buttermilk<br />
1/2 cup butter or margarine, melted<br />
1 cup grated onion<br />
1/4 cup chopped green bell pepper<br />
Oil for deep-fat frying</p>
<p>Combine the cornmeal, flour, baking powder, sugar, salt and baking soda in a large bowl. In a medium bowl, whisk together the egg, water, buttermilk and melted butter.</p>
<p>Add the onion and green bell pepper. Stir into the dry ingredients just until moistened.</p>
<p>Heat oil in a deep-fat fryer or an electric skillet to 375 degrees F. Drop the batter by teaspoonfuls into the hot oil a few at a time. Fry until golden brown on both sides.</p>
<p>Drain on paper towels. Serve warm. Makes 6 dozen hush puppies.</p>
