Crock-Pot Chicken & Rice

Crock-Pot Chicken & RiceI put this together for dinner last night using what I had available in my freezer and pantry. It was really good and required only a little of my time to prepare.

2 (10.5 ounce) cans condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of celery soup
1 cup instant rice
1/2 cup chopped onion
1 (6.5 ounce) can mushroom stems & pieces, drained
1 teaspoon curry powder
4 large chicken breast halves

1. In a 5-quart crock-pot or slow cooker, stir together the soups, rice, onion, mushrooms and curry powder. Place the chicken breasts on top.

2. Cover and cook on High for 3 hours or on Low for 4 to 5 hours. Makes 4 servings.

Tender Crock-Pot Ham

Tender Crock-Pot HamUse your oven for sides and desserts while this tender, flavorful ham “bakes” in your crock pot.

1 (4 pound) fully cooked ham
1-1/2 cups ginger ale
1/4 cup honey
1/4 cup packed brown sugar
1/2 teaspoon ground mustard
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon

1. Place ham in a 5 quart crock pot. Pour ginger ale over ham. Cover and cook on Low for 4 to 5 hours or until ham is heated through.

2. In a small bowl, combine the honey, brown sugar, mustard, cloves and cinnamon. Spoon over ham; cook 30 minutes longer. Makes 12 to 14 servings.

Crock Pot Green Beans

crock-pot-green-beansGreat tasting green beans are a favorite vegetable in my home. With this simple recipe, you can make them a favorite in your home too!

4 (14 ounce) cans cut green beans*
1/2 cup chopped onion
4 beef bouillon cubes
1/2 teaspoon black pepper**
1/2 teaspoon garlic powder
4-5 slices bacon, cut into small pieces

Pour 3 cans drained and 1 can undrained green beans in bottom of crock pot. Add chopped onion, bouillon cubes, pepper, garlic powder and cut up bacon. Stir to combine.

Cover tightly and cook on Low for 4-6 hours. Makes 8 servings with 5.5 net carbohydrates per serving.

* You may use frozen green beans (thawed), if you prefer.

**If you want to “turn up the heat”, add 1/2 teaspoon red pepper flakes before cooking!
