Pizza Dip

Pizza DipI have been playing around with finding some low-carb recipes to meet the dieting needs of some of my family members. This one just sort of “came together” and turned out to be really good.

1 (8 ounces) package cream cheese, softened
1/2 teaspoon oregano
1/2 teaspoon dried parsley flakes
1/4 teaspoon basil
1 cup shredded Mozzarella cheese, divided
1 cup grated Parmesan cheese, divided
1 cup pizza sauce
2 ounces pepperoni, chopped

1. In a small bowl, mix together the softened cream cheese, oregano, parsley and basil; blend well.

2. Spread mixture in bottom of a 9-inch pie plate. Sprinkle with 1/2 cup of the Mozzarella cheese and 1/2 cup of the Parmesan cheese.

3. Spread with the pizza sauce. Top with the pepperoni and the remaining cheeses. Cover and microwave on High for 5 minutes; serve hot. Makes about 8 servings each containing less than 2 net carbs.

Meat Lover’s Skillet Dinner

DSCN2282If you (like me) have a hungry meat-lover in your family, this is the recipe for you! It’s chock-full of ground beef, pork sausage, pepperoni and bacon! Add tender noodles and the zesty flavor of pizza sauce and oregano topped off with shredded cheddar cheese and you’ll have a sure-fire winner!

1 pound lean ground beef
1/2 pound bulk pork sausage
1 large onion, chopped
1 (3.5 oz) package sliced pepperoni, cut into fourths
6 slices bacon, cooked crisp and crumbled
2 (14 ounce each) jars pizza sauce
1 (15 ounce) can tomato sauce
1 tablespoon oregano
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups cooked wide egg noodles
1-1/2 cups shredded cheddar cheese

In a large skillet over medium-high heat, cook the ground beef, sausage and onion until the meat is no longer pink; drain. Stir in the pizza sauce, tomato sauce, oregano, onion powder and garlic powder; simmer, uncovered, 5 minutes or until hot and bubbly..

Add the cooked noodles. Top with the cheddar cheese; cover and simmer over low heat until cheese is melted. Makes 8 servings.

Pepperoni Pizza Bake

Pepperoni Pizza BakeThe delicious robust flavor of pepperoni pizza in a convenient taste appealing casserole! I made this for dinner last night and my family loved it!!

8 ounces rotini or other spiral pasta, uncooked
1 pound lean ground beef
1 medium onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
2 teaspoons Italian seasoning
2 (14 ounce each) jars pizza sauce
1 egg
1/2 cup milk
1/2 cup grated Parmesan cheese
1 (3.5 ounce) package sliced pepperoni
2 cups ( 16 ounces) shredded mozzarella cheese

1. Cook pasta according to package directions. Meanwhile, in a large skillet, cook the beef and onion over medium heat until the meat is no longer pink; drain and return to the skillet. Stir in the salt, pepper, garlic powder, Italian seasoning and pizza sauce; set aside.

2. In a medium bowl, combine the egg, milk and Parmesan cheese. Drain the pasta; toss with the egg mixture. Transfer pasta mixture to a greased 2-quart casserole. Top with the beef mixture, pepperoni and mozzarella cheese.

3. Bake at 350 degrees F. for 30 minutes or until hot and bubbly and cheese is melted. Makes 6 servings.

Meatballs and Little Sausages

Meatballs and Little SausagesThis hearty appetizer is sure to please everyone at your next party or get together.

36 frozen cooked Italian meatballs*
1 (16 oz) package miniature smoked sausages
1 (3-1/2 oz) package sliced pepperoni
1 (26 oz) jar meatless spaghetti sauce
1 (18 oz) bottle hickory flavor barbecue sauce
1 (12 oz) bottle chili sauce
1/4 cup packed brown sugar

Combine all the ingredients in a 5 quart slow cooker. Cover and cook on Low for 3 hours or until hot. Keep warm in slow cooker. Makes 8 cups.

* Place party toothpicks and a slotted spoon alongside the slow cooker. Guests can easily scoop the meatballs, sausages and pepperoni out of the sauce. They can use the toothpicks to make little kabobs for easy and tasty munching.

Sausage Pizza Bake

Sausage Pizza BakeA delightfully different way to enjoy the taste of pizza! Be sure to grab a fork, since this is not your usual finger-food pizza!

3 cups rotini pasta, uncooked
1 pound bulk Italian sausage
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
1/4 cup water
4 ounces sliced pepperoni
1 (14-15 oz.) jar pizza sauce
1 (4 oz.) can sliced mushrooms, drained
1 cup shredded pizza cheese blend

1. Preheat oven to 350 degrees F. Spray a 3 quart casserole dish with cooking spray. Set aside. In a 3 quart saucepan, cook pasta according to package directions; drain and return to the saucepan.

2. In a 10 inch skillet over medium heat, cook sausage until no longer pink; drain. Stir sausage, bell pepper, water, pepperoni, pizza sauce and mushrooms into pasta in saucepan. Spoon pasta mixture into the casserole dish and sprinkle with cheese.

3. Cover casserole and bake for 30-35 minutes or until hot and cheese is melted. Yields 6 servings.

Pizza Dip

Pizza DipIf you like pizza, and who doesn’t, you are sure to enjoy this flavorful dip. Your family and guests will compliment you on your good taste!

2-8 ounce packages cream cheese, cut into cubes
1-15 ounce can pizza sauce
1-8 ounce package sliced pepperoni, chopped
1-3.8 ounce can ripe olives, chopped and drained*
1-8 ounce package shredded mozzarella cheese
Bagel crisps or tortilla chips

1. Place the cream cheese in a 3 quart slow cooker. In a medium size bowl, combine the pizza sauce, pepperoni and olives; pour over the cream cheese. Top with mozzarella cheese.

2. Cover and cook on Low for 1-1/2 to 2 hours or until cheese is melted. Stir well and serve warm. Makes 5-1/2 cups.

3. Place bagel crisps and/or tortilla chips on serving platter or tray and place along side the dip.

* If you are not a fan of ripe olives, you may omit them. The pizza dip will still taste great!
