<p>1 tablespoon cooking oil<br />
1 cup fresh corn kernels*<br />
1 cup chopped red bell pepper<br />
1/2 cup chopped onion<br />
1-3/4 cup uncooked regular long-grain white rice<br />
4 cups chicken broth<br />
1 teaspoon ground sage<br />
1 (10-3/4 ounce) can condensed cream of celery soup<br />
1/4 cup grated Parmesan cheese</p>
<p>1. In a 4-quart saucepan over medium heat, heat the oil; add the corn, pepper and onion and cook for 6 minutes or until the vegetables start to brown.</p>
<p>2. Add the rice; cook for 30 seconds, stirring constantly. Stir in the broth and sage; heat to a boil. Reduce the heat to low; cover and cook 20 minutes or until the rice is done and most of the liquid is absorbed.</p>
<p>3. Stir in the soup; cook 2 minutes more, stirring occasionally, until heated through. Sprinkle with Parmesan cheese. Makes 8 to 10 servings.</p>
<p>* You may substitute 1 cup of drained, canned whole kernel corn for fresh corn, if desired.</p>

It was really good and required only a little of my time to prepare.</p>
<p>2 (10.5 ounce) cans condensed cream of chicken soup<br />
1 (10.5 ounce) can condensed cream of celery soup<br />
1 cup instant rice<br />
1/2 cup chopped onion<br />
1 (6.5 ounce) can mushroom stems &amp; pieces, drained<br />
1 teaspoon curry powder<br />
4 large chicken breast halves</p>
<p>1. In a 5-quart crock-pot or slow cooker, stir together the soups, rice, onion, mushrooms and curry powder. Place the chicken breasts on top.</p>
<p>2. Cover and cook on High for 3 hours or on Low for 4 to 5 hours. Makes 4 servings.</p>

<p>4 cups boiling water<br />
2 (5.7 ounces each) boxes sun-dried tomato Florentine long grain &amp; wild rice mix*<br />
4 large boneless skinless chicken breasts<br />
8 slices thick-sliced fully cooked deli ham<br />
1/4 cup diced red bell pepper<br />
4 (1 ounce each) slices Swiss cheese, cut in half</p>
<p>1. Heat the oven to 350 degrees F. Spray a 13&#215;9-inch baking dish with nonstick cooking spray.</p>
<p>2. Stir together the boiling water, rice and rice seasoning mixes in the baking dish.</p>
<p>3. Cut the chicken breasts in half lengthwise; wrap a ham slice around each chicken piece. Add the bell pepper to the rice mixture; place the wrapped chicken pieces over the rice. Cover with foil and bake for 40 to 45 minutes. Uncover and bake an additional 10 minutes or until the liquid is absorbed and chicken juices run clear when thickest part is cut.</p>
<p>4. Top each chicken breast with cheese. Bake, uncovered, 3 to 4 minutes or until cheese is melted. Makes 8 servings.**</p>
<p>* You may substitute other varieties of rice mixtures, such as mushroom or chicken.</p>
<p>**This recipe is easily divided in half if you only need 4 servings.</p>

It was even better than I expected!</p>
<p>1 (14 ounces) bag frozen broccoli, thawed<br />
4 cups (cubed or chopped) cooked chicken<br />
4 cups cooked rice*<br />
1 (10.5 ounces) can cream of chicken soup<br />
1 (10-3/4 ounces) can cheddar cheese soup<br />
1/2 cup mayonnaise<br />
1 (8 ounces) container sour cream<br />
1 cup shredded sharp cheddar cheese<br />
1 small jar chopped pimentos<br />
1 (6 ounces) package French fried onions</p>
<p>1. Place broccoli in bottom of a 9&#215;13-inch baking dish; top with the chicken.</p>
<p>2. In a large bowl, combine all the remaining ingredients except the French fried; pour over the chicken. Sprinkle the onions over the top.</p>
<p>3. Bake at 350 degrees F. for 30 minutes or until hot and bubbly and the onions are lightly browned. Makes 8 servings.</p>
<p>* I used minute rice prepared according to the package directions.</p>

1/2 cup all-purpose flour<br />
1 teaspoon salt<br />
1/2 teaspoon ground black pepper<br />
3 tablespoons olive oil<br />
1/2 cup chopped onion<br />
2 garlic cloves, minced<br />
1/2 cup chopped green bell pepper<br />
1 tablespoon butter<br />
2 (14-1/2 ounce) cans diced tomatoes<br />
1 (6.5 ounce) can mushroom stems &amp; pieces<br />
1 cup white cooking wine<br />
1 teaspoon oregano<br />
Hot cooked egg noodles or white rice<br />
Grated Parmesan cheese (optional)</p>
<p>1. Cut the chicken into bite-sized pieces. Combine the flour, salt and pepper in a large resealable plastic bag; add the chicken a few pieces at a time and shake to coat.</p>
<p>2. In a large skillet over medium heat, brown the chicken in the oil in small batches; transfer to a Dutch oven.</p>
<p>3. In a small skillet, cook the onion, garlic and green bell pepper in the butter until vegetables are tender; add to the meat in Dutch oven. Stir in the diced tomatoes, mushrooms, white cooking wine and oregano; cover and simmer over medium-low heat for 30 to 40 minutes. Serve over hot cooked noodles or white rice; sprinkle with Parmesan cheese, if desired. Makes 6 to 8 servings.</p>

<p>1 cup long-grain white rice<br />
1 tablespoon vegetable oil<br />
1-1/2 cups chicken broth<br />
1/4 cup finely chopped onion<br />
1/4 cup finely chopped green bell pepper<br />
1 fresh jalapeño pepper, chopped<br />
1 medium tomato, seeded, chopped<br />
1 tablespoon chicken bouillon granules<br />
Salt &amp; Pepper to taste<br />
1/2 teaspoon ground cumin<br />
1/2 cup fresh chopped cilantro<br />
1 garlic clove, minced</p>
<p>In a medium heavy saucepan, cook the rice in the oil over medium heat for about 3 minutes. Add the chicken broth and bring to a boil.</p>
<p>Stir in the remaining ingredients. Bring to a boil; cover and reduce the heat to low. Cook covered for 20 minutes or until the rice is fluffy and the liquid is absorbed. Makes 4 servings.</p>

3/4 cup uncooked regular long-grain white rice<br />
1/4 cup dry bread crumbs<br />
2 tablespoons butter, melted</p>
<p>1. Stir the soup, milk, paprika, red pepper, tuna, cheese and rice in a 9-inch square baking dish; cover with aluminum foil.</p>
<p>2. Bake at 350 degrees F. for 30 minutes; uncover and stir.</p>
<p>3. In a small bowl, combine the bread crumbs and melted butter; sprinkle over the tuna mixture. Bake 20 minutes longer or until hot and bubbly and the rice is tender. Makes 4 servings.</p>

<p>2 tablespoons butter or margarine<br />
1 pound boneless, skinless chicken breasts, cubed<img class="alignright size-medium wp-image-5493" title="Honey Dijon Chicken &amp; Rice" src="http://www.marvelousrecipes.net/wp-content/uploads/2009/08/dscn1545-300x191.jpg" alt="Honey Dijon Chicken &amp; Rice" width="300" height="191" /><br />
1/2 cup chopped onion<br />
2 garlic cloves, minced<br />
3 tablespoons honey<br />
1 tablespoon Dijon-style mustard<br />
1/2 teaspoon thyme leaves<br />
1/2 teaspoon salt<br />
1/4 teaspoon pepper<br />
2 cups hot cooked rice</p>
<p>In a heavy skillet, over medium heat, melt the butter. Add the cubed chicken, chopped onion and garlic; cook until the meat is no longer pink.</p>
<p>Stir in the remaining ingredients, except the rice; cover and cook over medium heat for 10 to 12 minutes, stirring occasionally. Serve over hot cooked rice. Makes 4 servings.</p>

1/4 teaspoon salt<br />
1/4 teaspoon pepper</p>
<p>In a large skillet over high heat, bring broth and butter or margarine to a boil. Stir in the rice with seasoning packet, vegetables, salt and pepper; blend well.</p>
<p>Return to a boil. Reduce heat; cover and simmer 5 to 8 minutes or until rice and vegetables are tender.  Makes 4 to 6 servings.</p>

<p>4-3/4 cups milk<br />
2/3 cup long grain white rice<br />
1/3 cup granulated sugar<br />
2 tablespoons butter or margarine<br />
1 teaspoon ground cinnamon<br />
1/3 cup raisins<br />
2 teaspoons vanilla<br />
2 egg yolks</p>
<p>In a large saucepan, combine 4 cups of the milk, rice, sugar, butter or margarine and cinnamon. Simmer over Low heat until rice is tender and mixture is creamy, stirring frequently, about 1 hour. Remove from heat; stir in raisins and vanilla.</p>
<p>Pour 3/4 cup milk into a small saucepan; bring to a simmer. Whisk egg yolks in small bowl to blend; gradually whisk the hot milk into the beaten egg yolks. Return mixture to the saucepan; stir over medium heat about 2 minutes. DO NOT boil. Stir egg mixture into rice mix.</p>
<p>Transfer to a large non-metal dish; cover and chill in refrigerator. May be eaten hot, if preferred. Store left-overs, covered, in the refrigerator. Makes 6 servings.</p>
