Swiss & Bacon Cauliflower

Swiss and Bacon CauliflowerReady for a change of taste? Try this new and delicious way to perk up the flavor of cauliflower!

Cooking Spray
1 (10-3/4 oz) can condensed cream of mushroom soup
1/2 cup milk
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 (16-20 oz) bag frozen cauliflower florets, thawed
1 cup finely grated Swiss cheese
1/3 cup cooked crumbled bacon (can use real bacon bits)

1. Preheat oven to 350 degrees F.

2. Spray a 2-qt. casserole with cooking spray. In a large bowl, stir together the soup, milk, garlic, salt, pepper, cauliflower and 1/2 cup of the cheese. Pour into the prepared casserole. Sprinkle with the remaining cheese and the crumbled bacon.

3. Bake, uncovered, for 50 minutes or until the mixture is hot and bubbly and the cauliflower is tender. Makes 6 servings.

Swiss Cheese Bread

Swiss Cheese BreadMy family enjoys this wonderful cheese bread with soup or stew. It’s also great as an accompaniment to dinner.

6 slices bacon
3-3/4 cups all-purpose flour
5 teaspoons baking powder
1 teaspoon salt
2 cups shredded Swiss cheese
1/4 cup chopped onion
1-1/2 cups milk
2 large eggs

In a 10-inch skillet, cook the bacon until crisp; drain, reserving 2 tablespoons of the pan drippings. Crumble the bacon.

In a large mixing bowl, combine the flour, baking powder and salt; mix well. Stir in the bacon, shredded cheese and onion.

In a medium mixing bowl, whisk the reserved pan drippings, milk and eggs. Add to the flour mixture, stirring just until moistened.

Spoon into a greased 5×9-inch loaf pan. Bake in a preheated 375 degree oven for 1 hour. Invert onto a wire rack immediately. Makes 12 servings.

Crunchy Potato Balls

Crunchy Potato BallsThese delightfully delicious potato balls are sure to be a hit at your next party or get-together!

2 cups cooked mashed potatoes
2 cups finely chopped cooked ham
1 cup shredded Swiss cheese
1/2 cup mayonnaise
2 large eggs, beaten
1/4 cup finely chopped onion
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper
3-1/2 cups crushed cornflakes

1. In a large mixing bowl, combine all the ingredients except the cornflakes; mix well. Shape into 1-inch balls.

2. Roll each ball in cornflakes and arrange on a greased 11×7-inch baking sheet.

3. Bake at 350 degrees F for 30 minutes or until brown. Makes 15 servings.

Cheesy Puffs

cheesy-puffsThese tasty and tender puffs of cheese will be the talk of your next party! Better make extra; they disappear really fast!

1 cup water
2 tablespoons butter or margarine
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup all-purpose flour
4 large eggs
1-1/4 cups Swiss cheese
1 tablespoon Dijon mustard
2/3 cup grated Parmesan cheese

1. In a large heavy saucepan over medium-high heat, bring water, butter or margarine, salt and cayenne pepper to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat and let stand 5 minutes.

2. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny.

3. Drop by rounded teaspoonfuls onto a greased baking sheet, spaced 2 inches apart. Sprinkle with Parmesan cheese. Bake at 425 degrees F for 15 to 20 minutes or until golden brown. May be served warm or cold. Makes about 4 dozen.
