Italian Beef Soup

Italian Beef SoupA rich, hearty and flavorful soup that’s quick, easy and ready to serve your hungry family in just minutes!

1 pound lean ground beef
2 (14 oz) cans beef broth
1 (16 oz) package frozen mixed vegetables
1 (14-1/2 oz) can diced tomatoes, undrained
1-1/2 cups tomato juice
1 cup dried rotini pasta
1 teaspoon dried Italian seasoning, crushed
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded Parmesan cheese

In a 4-quart Dutch oven over medium heat, brown the beef; drain well. Return beef to Dutch oven. Stir in the beef broth, mixed vegetables, undrained tomatoes, tomato juice, pasta, Italian seasoning, garlic powder, salt and pepper.

Bring to a boil; reduce heat and simmer, uncovered, 15 minutes or until pasta and vegetables are tender, stirring occasionally. Sprinkle individual servings with Parmesan cheese. Makes 6 to 8 servings.

Beans and Pork Casserole

6 strips bacon, chopped
1/2 pound bulk pork sausage
1/2 pound boneless pork tenderloin, cubed
1/2 cup chopped onion
2 cloves garlic, finely chopped
2 (15.8 oz) cans great northern beans, drained
1 (14.5 oz) can diced tomatoes, undrained
3/4 cup chicken broth
1 teaspoon dried sage leaves
1 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 dried bay leaf

Cook bacon in a 12-inch skillet over medium-high heat, until crisp, stirring occasionally. Remove from skillet reserving drippings. Add sausage, cubed pork, onion and garlic to drippings in skillet. Cook until the pork is browned, stirring occasionally. Stir in bacon and all remaining ingredients. Pour into ungreased 11×7-inch casserole.

Cover casserole with aluminum foil. Bake at 350 degrees F for 1 hour 45 minutes. Uncover; bake 15 minutes longer or until pork is fork tender and flavors are blended. Remove bay leaf before serving. Makes 6 servings.

Hungarian GoulashTender round steak in a rich flavorful sauce served over hot cooked noodles. A marvelous tasting dinner!

2 pounds beef round steak, cut into 1-inch cubes
1 cup chopped onion
2 tablespoons all-purpose flour
1-1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon coarse ground black pepper
1 (14-1/2 oz) can diced tomatoes, undrained
1 bay leaf
1 cup sour cream
Hot cooked noodles

Place round steak and onion in bottom of a 3 quart slow cooker. In a small bowl, combine flour, paprika, garlic powder, salt and pepper. Sprinkle over beef and stir to coat.

Add tomatoes; stir to blend. Add bay leaf. Cover and cook on Low for 8 to 10 hours or until meat is tender.

Discard bay leaf. Stir in sour cream just before serving; heat through. Serve over hot cooked noodles. Makes 6 to 8 servings.
